Sushi, the iconic Japanese dish, is as much about the rice as it is about the fillings and toppings. Perfecting sushi rice is an art form in itself, requiring just the right balance of seasoning and texture. Ingredients:

– 250g of Sushi Rice
– 300ml of Water
– 30ml of Rice Vinegar
– 1 tablespoon of Salt
– 2 tablespoons of Sugar

For the Sushi:

– 100g of Smoked Salmon (cut into strips)
– 1 handful of Arugula (rocket)
– 1/2 Cucumber (sliced at an angle)
– 4 Cherry Tomatoes (halved)
– 2 tablespoons of Pickled Ginger

For the Mayo:

– 1 clove of Garlic (minced)
– 1/2 cup of Mayonnaise
– Juice of 1 Lemon
– Salt and Pepper to taste

– 1 packet of Wasabi Crackers

Instructions:

1. Prepare the Sushi Rice: Begin by rinsing the sushi rice thoroughly. Place the rice in a large bowl and cover it with water. Stir the rice with your hands until the water becomes cloudy. Drain the water using a colander and repeat this process until the water runs clear. Once rinsed, let the rice soak in water for about 20 minutes. After soaking, drain the rice and transfer it to a small pot. Cook the rice over high heat for 7 minutes, then reduce the heat and let it simmer for an additional 20 minutes. While the rice is cooking, combine rice vinegar, sugar, and salt in another pot and keep it warm. Once the rice is cooked, transfer it to a large bowl and gradually add the vinegar mixture, mixing well. Allow the rice to cool.

2. Prepare the Sushi Fillings: Once the sushi rice has cooled, add the smoked salmon and mix well. Shape the rice mixture into balls of your desired size and refrigerate until ready to serve.

3. Make the Mayo: In a medium-sized bowl, mix minced garlic, mayonnaise, lemon juice, salt, and pepper until well combined.

4. Assemble the Sushi: To serve, place a bed of arugula (rocket) in the centre of a plate. Arrange sliced cucumber and halved cherry tomatoes around the plate. Add a teaspoon of mayo between each tomato and cucumber. Sprinkle wasabi crackers over the salad and place the sushi rice balls on top.
