Council hosts International Women's Day event

Mid and East Antrim Borough Council was proud to host an International Women’s Day 2024 event in Larne last week, celebrating the social, economic, cultural, and political achievements of women around the world.

 

The theme of this year’s campaign was ‘Inspire Inclusion’ – “When we inspire others to understand and value women’s inclusion, we forge a better world. And when women themselves are inspired to be included, there’s a sense of belonging, relevance, and empowerment.”

 

The event included keynote speeches from prominent female leaders in the local community who and discussions on important issues facing women today.  Speakers included Maia Wright from The Ticket Bakehouse; Siobhan Mulvenna from SMT Solutions; Geraldine Connon – Fashion Designer from Larne; Ivy Goddard MBE Project Manager Inter Ethnic Forum; Gillian Creevy, CEO Women’s Aid and Christine Barnhill from the Skills and Entrepreneurship Team – Mid and East Antrim Borough Council.

 

Attendees also had the opportunity to network and connect with other like-minded individuals, as well as learn about resources and opportunities available to women in and around MEA.

 

“We were thrilled to host our International Women’s Day event – celebrating women all over the world who are committed to women’s equality” said Mayor of Mid and East Antrim, Alderman Gerardine Mulvenna. “Council wanted to host an event that celebrated the day by learning from and inspiring each other, so that all of us – men and women – can help create a better world that is diverse, equitable and inclusive.

 

“Events like this are an amazing way to remind ourselves that as women we can – and are – achieving great things. But it also gives us an opportunity to reflect on the road ahead, what remains to be done in our quest for gender equality and how we might harness our collective energy to get there.

 

“Organisations, groups, and individuals can all play a part – in the community, at work, at home, and beyond. Collectively, let’s forge a more inclusive world for women.”

6. Check the Roasted Vegetables: By this point, the pumpkin and sweet potato should be soft and well-roasted. If not, don’t worry; oven times can vary. If they are soft, proceed to the next step.

7. Blend the Soup: Add the roasted pumpkin and sweet potato to the pot with the sauce. Stir them in and cook until everything is soft and well combined. You can use a hand blender or a food processor to blend the mixture until it’s smooth.

8. Season to Taste: Return the soup to the heat and season with salt and pepper to taste.

9. Serve and Garnish: Ladle the creamy soup into large bowls. For a burst of flavour and aroma, add the picked rosemary on top. Finish the dish by sprinkling Parmesan cheese on the soup.

10. Optional Croutons: If you prefer, serve the soup with crispy croutons on the side. This is a matter of personal preference, so feel free to skip them if you like.

11. Enjoy: Sit back, savour the delicious flavours, and enjoy this creamy turmeric pumpkin and sweet potato soup. It’s a wholesome and satisfying meal perfect for any autumn day.
