The Pork Balls Recipe:
– 300g lean minced pork
– 1/2 teaspoon dried ginger
– 1/2 teaspoon dried coriander
– 1/2 teaspoon garlic powder
– 1/2 teaspoon Chinese five spice
– 1 beaten egg
– Salt and pepper to taste

The Sauce:
– 4 tablespoons hoisin sauce
– 2 tablespoons honey
– 1 teaspoon dark soy sauce

– 1/2 teaspoon garlic powder

– 2 grated carrots
– 2 finely sliced apples
– 8 cherry tomatoes, halved
– 8 baby onions
– 4 handfuls of arugula (rocket)
– 1 finely sliced red onion
– 1/2 cucumber, sliced

For the Couscous:
– 2 cups couscous
– 1 cup boiling water
– 2 tablespoons olive oil or unsalted butter
– Salt and pepper to taste

Method:
1. In a large bowl, mix minced pork, spices, beaten egg, salt, and pepper. Shape into balls and refrigerate to firm up.
2. Prepare couscous by pouring boiling water over it, covering with cling film, and letting it rest. Fork in butter or olive oil, season, and cover until ready to mix with the salad.
3. Heat a pan with vegetable oil, cook pork balls on each side until done, then allow them to rest.
4. Mix salad ingredients in a large bowl, add couscous, season with salt and pepper, and arrange on a plate. Place pork balls on top and drizzle the warmed sauce over them. Sprinkle sesame seeds for the finishing touch.
