Amanda started working in Dobbins inn, in Carrickfergus when she was 14, starting in the Kitchen and worked her way up to Sous Chef.

Salted Chilli Chicken in a Honey Chilli Sauce


Honey chili chicken is a delicious non-vegetarian recipe that is loved by chicken lovers for its a flavours. It is served as a side dish and best enjoyed during home parties or family gatherings.

  • 2 sliced onions
  • 1 sliced carrot
  • 3 mix peppers
  • 5 pineapple rings in chunks
  • 2 spring onions sliced
  • Oil
  • 5 chicken fillets


  1. 5 chicken fillets sliced
  2. Mix in plain flour until coated
  3. Added to 6 eggs mixed, a few at a time
  4. Add to the flour mix
  5. Flour mix 500g plain Flour
  6. 1 tbsp cornflour
  7. 1 tbsp chilli flakes
  8. 2 tbsp chilli powder
  9. 2 tbsp paprika
  10. 2 tbsp black pepper
  11. 2 tbsp sea salt
  12. Deep fried medium heat until golden and set aside
  13. Pan mix
  14. 2 sliced onions
  15. 1 sliced carrot
  16. 3 mix peppers
  17. 5 pineapple rings in chunks
  18. 2 spring onions sliced
  19. Cook in oil 2 tbsps
  20. Until they start to soften add
  21. 600g sweet chilli
  22. 250g honey
  23. 2tbsp soya sauce
  24. Cook of for 10/15 minutes
  25. Deep fry chicken and add to your sauce
